At Swad Restaurant, our Uthappam is the soft, hearty cousin of the dosa — the same fermented rice-and-lentil batter, but cooked thicker on the griddle and loaded with chopped onion, tomato, green chillies and fresh coriander pressed into the surface.

Just like our dosa, the batter is fermented in-house for the right balance of tang and rise. The vegetable topping is fresh-cut and pressed into the batter on the griddle so the flavours cook into the pancake instead of sitting on top.
